The Basic ingredients for “Haemul Pajeon’ are fresh seafood and scallions, About an inch thick, it is served on a hot stone dish to keep it warm.

- 1/2 squid, cut into 1/4-inch strips
- 10 mussels, shelled
- 15 small shrimps, peeled and devailed
- 2 ounces lump crap meat, shredded
- 7 scallions (white green parts), roots trimmed and cut into 5-inch pieces
- 3 eggs
- 1/4 cup all purpose flour
- 1/4 cup sweet rice flour (you may replace with all-purpose flour)
- vegetable oil
Blanch squid, mussels and shrimps in a pot of boiling water and drain. Put eggs, all-purpose flour and sweet rice flour in a bowl and whisk together. Add prepared squid, mussels, shrimp and crap meats, and mix in.
Add about 2 table spoons of vegetable oil on a heated large nonstick frying pan. Bundle the scallions and spread them on the pan to a width of about 9-inches (some will stick out on top of each other). Let it cook for about 1 minute and then pour the batter on top. Turn the temperature down to medium-high and cook for about 5 minutes with the lid closed.
Add on a table spoon of vegetable oil on the batter and then use two spatulas to flip the pancake. Continue to cook about 4-5 minutes with the lid removed. Add more vegetable oil if necessary. Cook until the pancake id fully cooked or golden grown on both sides
